  1. I don’t remember for sure what the pre-cooked falafel is referred to but someone mentioned paste and that does seem right; batter and dough are definitely not though.

    I live in the UAE for 5 years and KSA 2 years and in those 7 years in the Middle East, where the falafel originates from though I’m not certain of the specific country of origin, I never saw a falafel patty. 100% we’re not really round balls but more of a football (American pigskin variety) shape. I would generally like to say it’s because it’s easier than perfectly round balls, however I saw falafel presses and they all produced a football-ish shape.

    Your recipe seems pretty legit, though I will have to produce falafel via your recipe and let my taste buds speak to the authenticity.

  3. One tip: squish the balls a bit from one direction before frying, gets some cracked edges that play very nicely with deep frying and gives you some texture contrast

  4. Thank you, Babish! Just made this and it was great! My falafel mixture wasn’t holding together after processing- it was a little wet. Maybe I didn’t let the chickpeas drain long enough? A few tablespoons of flour helped. I’m so grateful for your video! 🙂
