Fries in same oil as fish? Cook fries first and then fish so no fish taste on fries.

For the tartar sauce:

ON. POINT. At first I thought something was missing and then I realized I forgot the onion. As a result I added an extra tbsp of lemon juice and an extra tsp of malt vinegar because it was too heavy (it was missing the onion acid I forgot). I don't normally like lemon zest because it's too overpowering but I took a chance and have no regrets. This will be replacing my existing tartar sauce recipe.

For the beer batter:

I don't like beer and don't prefer vodka. However, beer batter is such a big thing and since I've never tried it (to my knowledge) I decided to give it a go. After mixing the batter together using Budweiser that was flat overnight (Google said that was better) and adding a bit of pepper, I tasted it and the flavor was flat. I also smelled the beer and was worried. I added more salt, pepper, and honey, then hoped for the best.

Once chilled I cooked according to your directions with cod. The results? CRISPY. The tempura trick is visually pleasing but I don't want it for myself. As for flavor, it was still flat and I think I don't like cod so much. HOWEVER, once I dipped the fish in the sauce everything came together.

I'm a person who likes strong flavors and too often I reject my own recipes that I make up because everything is too overpowering. For whatever reason it never clicked for me to think of how things would come together in the end as opposed to each component as it is on its own. Would I want to eat the fried fish on its own? Never. BUT, pair it with that sauce and it's great.

I will be trying this again with haddock if I can find it, but definitely perch or whiting (my favorites).

If you go to a chipshop in the UK they have this weird vinegar that is basically just distilled acetic acid….it smells really different to malt vinegar.

Heston Blumenthal triple cooked chips are great but as a Brit the one thing that makes a good fish and chips great is that they don't use standard oil, they use beef dripping. It's less common than it used to be because most modern places cut corners on cost but I would 100% recommend getting your hands on some and giving it a try, you can't not taste the difference.

Places that use vegetable oil really don't compare and its such an important ingredient that gets criminally overlooked because people simply aren't aware that's what traditional chippies use.

Not using it is like making pesto with vegetable oil, it'll taste nice but you're handicapping your potential

For the potatoes, adding vinegar to the water will while softening them will stop them from breaking. Love the dish. It looks amazing… the trick to "mohawk" the fish is great. Thanks
